Baingan Bharta is a indian vegetarian dish that is prepared by mincing eggplant that is grilled over charcoal or direct fire and then cooked with spices.

  • 1-2 medium eggplant
  • 1/2 cup green peas
  • 1-2 chopped green chillies
  • 1/2 tbsp cumin
  • 1/4 tbsp turmeric
  • Salt (as needed)
  • 1/2 tomato
  • chopped
  • 1 cup coriander leaves
  • 5-6 curry leaves
  • 1 cup chopped spring onion
  • Vegetable oil.


  • Rinse the Eggplant and pat dry.
  • Apply oil all over it and place it on fire on medium flame and Roast it for 5 min .
  • Give time for this process as it gives a best smoky flavour and it should cooked from inside.
  • Once eggplant roasted, peel and remove its Skin.
  • We can also dunk it in water once peeled the skin to get rid of any small bits of burnt skin which may still there.
  • Cut off the stem and put a peeled baingan into a bowl and mash it.
  • Heat oil in pan, add curry leaves, green chillies, chopped garlic and cumin.
  • Add chopped spring onion, Green peas and fry it.
  • Add turmeric, chopped tomato , salt and cook for half min.
  • Add mashed baingan and mix it well, saute it for 1 min until all ingredients mixed well.
  • Cover the pan and let it cook for 3-4 min.
  • Once cooked, Garnish it with coriander,
  • And the delicious Baingan Bharta is ready to have with chapati/roti.
