Step 1 : In a pressure cooker put washed & chopped cauliflower , potato , green peas & carrot with 2 -3 cups of water and add some salt and take 3-4 whistles , off the gas and let it cool down.
step 2 : once the vegetables are cooked then mash with the help of potato masher and keep it aside.
step 3 : In a cooking pan , add oil & butter and let it warm for a min and add chopped onion & ginger garlic paste and saute for few mins.
Step 4 : once the onion are sauted , then add capsicum cook for another minute , once done add chopped tomatoes cook until all become soft.
Step 5 : now add all the dry spices that is red chilly powder , turmeric powder , coriander powder , cumin powder , pav bhaji masala powder and salt to taste.
Step 6 : Mix all together and cook for 2-3 minutes or until all the spices leave the oil.
Step 7 : once all the spices mix , now add 2 cups of water cook for 1 minute.
Step 8 : Now add all the mashed vegetables in the Pan , mix everything together nicely for approx 5 mins.
Step 9 : Once Bhaji is cooked switch off the flame and add coriander leaves and extra butter .
Step 10: Bhaji is ready to serve , serve it with the shallow fried pav , chopped onion , lemon slice & butter.
