4- 5 medium capsicum 4 medium boiled potatoes 1/2 cup green peas (optional) 1-2 chopped green chillies 1/2 tbsp cumin 1/4 tbsp turmeric 1/4 red chili powder Salt (as needed) 1/2 tomato
chopped. 1 cup coriander leaves 5-6 curry leaves 1 Onion
chooped 1 tbasp chopped garlic and ginger. Vegetable oil.
Instructions
This is hows i made our sunday lunch special with delicious Stuffed Capsicum :
Boil potatoes, Peel and mash the potatoes in a bowl.
Rinse the capsicum and pat dry. Slice off the top of capsicum , remove the seeds and keep aside as shown in pictures.
Keep the sliced top of capsicum as we will be using top to cover up stuffed capsicum.
In a pan, heat oil and half fry capsicums and keep aside.
Now for stuffing, make a thick grated paste of cumin, garlic, ginger and coriander.
Heat oil in pan, add curry leaves, green chillies, chopped onion and the above paste. Fry it for 1 min.
Add turmeric, red chilly powder, chopped tomato , salt and cook for half min.
Add mashed potatoes and mix it well with all cooked ingredients, saute it for 1 min and then add chopped coriander leaves.
Let this spiced potato stuffing become warm.
With a spoon, stuff the potato mixture in the capsicum as shown in pictures. Cover the stuffed capsicum with its sliced top.
Now to cook stuffed capsicum, brush oil outside the capsicums. you can bake it in an oven.
To cook in pan, add 1 tbsp oil in pan, add cumin seeds and curry leaves.
Put stuffed capsicums in the pan, Cover the pan and let capsicum cook on a low flame.
Check in between and keep changing the sides of stuffed capsicum so that all sides are cooked well.
Once cooked, Garnish the Stuffed capsicums with coriander, also you can add remaining potato stuffing in pan and deep stuffed capsicum in it.
And the delicious Stuffed Capsicum is ready to have with chapati/roti.
