Veg sandwich is a quick breakfast or snack item. There can be a variety of vegetable fillings in this. Here we have tried to keep it healthy using brown bread and some veggies.
Firstly, boil the potatoes and allow them to cool. Now put them in the refrigerator.
To prepare the pudina chutney, we will take half cup pudina leaves, 1 cup coriander leaves 2 green chillies, salt as per taste, small piece of ginger, 1 teaspoon lemon juice in a bowl.
Now blend this in a blender for 1 minute. Our chutney is ready. Remove it in a bowl.
Now cut the onions, capsicum, tomatoes and cucumber into slices. Remove the potatoes from the refrigerator and cut them into slices too.
Place a slice of brown bread and apply butter to it. Now apply the pudina chutney and place slices of onion, tomato, potato and capsicum on it.
Add some cheese and cover it with a slice of bread.
If you have an electric griller, turn it on. In my case, I have used a gas griller so I needed to heat it on a low flame.
Now apply some butter to the bread slices from outside so that it does not stick to the griller. Now place the sandwich inside the griller.
Grill for 1 minute from both the sides. Be careful as it my over grill and burn the bread. Keep checking everytime your turn it.
Place the grilled sandwich in a plate and add some cheese from top. Serve with pudina chutney or ketchup or mayonnaise sauce. You can also have a cup of tea or coffee.
